Chewy Blackberry Oat Bars {No butter, gluten, or white sugar!}




If you follow my other blog, you have probably surmised that today is BLACKBERRY DAY.


Please excuse the caps. It's just... they're so beautiful. I mean, look. JUST LOOK AT THOSE COLORS. 


Anywho, these bars are easy, healthy (just don't argue), gluten free, dairy free, and have no white sugar which makes them chewy and crispy. Here's a tip though: if you don't eat them right away (why?) then you should probably keep them in the fridge so they don't get soggy.


Chewy Blackberry Oat Bars

1 1/2 cups gluten free oat flour
1 cup gluten free oats
1 cup brown sugar
1/2 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
3/4 cup coconut oil (or substitute 3/4 cup butter)
2 cups blackberries (1 pint)
2 tablespoons corn starch

Preheat oven to 375ºF and line an 8x8 inch pan with parchment paper and grease the paper. Combine the oats, oat flour, brown sugar, cinnamon, baking powder and salt. Add the coconut oil and vanilla and mix until crumbly. Reserve one cup of this mixture for the top and press the rest into the pan. Toss the blackberries in the cornstarch and sprinkle them over the crust. Sprinkle on the remaining crumbs. Bake for 35 minutes. Store in the refrigerator to prevent sogginess if you aren't eating immediately.
