Secretly Healthy Granola
2 1/2 cups gluten-free rolled oats
1 cup sweetened flaked coconut
1 cup nuts (I used pecans), roughly chopped
1 cup dried fruit (I used cherries)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 cup maple syrup
1/4 teaspoon cinnamon
1 teaspoon vanilla
2 egg whites
Mix it all together. Bake on a greased cookie sheet for 1 hour at 250ยบ, stirring every 15 minutes. Store in an airtight container. Serve with vanilla almond milk. Yum.
